Iced Kitty-chata Latte | Rad Cat Coffee Co.

Horchata is one of the best year-round drinks! It is a traditional Mexican sweet rice milky drink. The spice in it make it especially nice in the fall. The cinnamon and rice milk make it super tasty and super flavorful and when you add Rad Cat Coffee to it - it is off the charts in taste! The perfect blend of sweetness, coffee, creaminess and caffeination!

Also, I just want to harp on the Purrr-Fect Jive medium roast coffee for a minute. This is my favorite Rad Cat Coffee bag so far and I have tried eight of them now! It is full of flavor but also somehow really light. Purrr-fect is the best name for it because that is exactly what it is. Drink this coffee solo or pair the Purrr-fect coffee with a delicious horchata - either way you have pure cat magic!

My boyfriend has tried about a zillion different coffee drinks that I have made for him and this Kitty-chata was by far his favorite - mine too!

Let’s begin - this drink is going to change your world!

This recipe happens in two parts - first the horchata and then the coffee.

To make the horchata, put a heaping 1/2 cup of almonds, 3/4 cup long grain white rice, and three cinnamon sticks in a blender.

Pulse the three ingredients in the blender, then mix on medium until the mixture is as close to a powder as possible.

Add two cups of water to the mixture in the blender.

Blend the water and the powder mixture together really well. Pour it into a container to store in the fridge.

Store it in the fridge for at least six hours. It can be stored for up to 12. I originally set my timer for six hours but I ended up leaving it in the fridge for seven.

Once it was ready, I tried straining it with my french press but it didn’t quite work. There was a ton of liquid left in the bottom that didn’t come out so I ended up straining it with my hand strainer. You can also use cheesecloth doubled up to strain it.

I strained it seven or eight times to make it as smooth and creamy as possible.

I strained mine at night so it would be ready for my coffee the next morning so I put it in a glass bottle and put it back in the fridge.

I strained it one more time the next morning.

Next, add half a cup of sugar (add more or less depending on taste), a pinch of salt, 1/4 teaspoon of vanilla, and 3/4 cup of half and half to the strained mixture.

Mix it all together really well. I used a hand whisk and a spoon to get the sugar at the bottom mixed well.

Then, put it into a container and put it back in the fridge while the coffee is being prepared.

I used a moka pot (stovetop espresso maker) for the espresso. Lucky for you, you don’t have to go far to buy one - you can choose from two sizes on the Rad Cat website and they are amazing!

First, add water to the bottom of your moka pot. You can add water all the way to the safety spout. I usually don’t fill it up all the way because I like bolder coffee. Then put the filter in.

Next, grind your Rad Cat Purrr-fect Jive coffee beans really finely if you didn’t buy them ground already.

Add the ground coffee to the filter. Be careful not to pack the coffee. Just fill the filter and carefully run your hand over the top to get rid of loose grounds.

Then, put the top on your moka pot and put it on the stove on high.

Make sure the moka pot is on the side of the burner and not directly in the middle. If it is in the middle, the handle will get crazy hot and it could burn you.

I usually check the espresso every couple of minutes or so. Once the water boils it will shoot through the spout and start coming into the top of the moka pot. Once there is enough espresso in the pot, you can take it off the hot burner.

While you are waiting for the espresso to be finished you can prepare the rest of your drink. 

This kitty-chata recipe makes just enough for two so invite a friend over who also has a pet cat and have a cat date! :) Get two glasses ready and fill them with ice.

Then, get your horchata from the fridge and add it to the glasses.

Make sure to leave enough room for the espresso. :)

Once the espresso is ready, add it to your glasses of horchata. I used half of the moka pot of espresso for each drink.

Add a cinnamon stick to each glass for garnish and extra spice.

After you get some photos of the amazing drink you created, mix it up with the cinnamon stick and gulp it down. Your taste buds will purrrrr! :)

Recipe - Iced Kitty-chata Latte

Time to prepare: 25 minutes (not including refrigeration/steeping time for horchata)
Serving size: Two 16 oz Iced Kitty-chata Lattes

Ingredients
-The Purrr-fect Jive Coffee from Rad Cat Coffee Co.
-A heaping 1/2 cup of almonds
-3/4 cup long grain white rice
-5 cinnamon sticks (2 are for garnish)
-1/2 cup of sugar (add more or less based on preference)
-Pinch of salt
-1/4 teaspoon of vanilla
-3/4 cup of half and half
-2 cups of water

Materials
-A Blender
-An espresso maker (I used a moka pot)
-A strainer (Or doubled up cheese cloth)

Directions
1. Put almonds, rice and 3 cinnamon sticks in blender. Pulse and blend until it is a powder.
2. Add two cups of water to the mixture in the blender and blend well on medium setting.
3. Put the mixture in a container and refrigerate for 6-12 hours.
4. After 6-12 hours, strain the mixture multiple times with a strainer or doubled cheese cloth.
5. Add vanilla, half & half, salt, and sugar to the mixture. Mix it up really well with a whisk and spoon.
6. Refrigerate mixture while preparing your espresso.
7. Use a moka pot or espresso maker to make espresso. For the moka pot use half of it per drink. For an espresso maker put two shots in each drink.
8. Get the horchata mixture from the fridge and pour it over ice into two glasses.
9. Add the espresso to the glasses.
10. Mix the espresso with the horchata and add a cinnamon stick to each drink for garnish.
11. Drink it up and let your taste buds purrrr!

Bulletproof coffee, also known as butter coffee or keto coffee, was introduced to the health community in 2011. There are many variations of bulletproof coffee but it typically consists of brewed coffee, unsalted grass -fed butter, MCT oil or coconut oil blended really well in a blender. Cinnamon, heavy cream and other ingredients can be added based on personal preference.

American entrepreneur Dave Asprey came up with the concept of bulletproof coffee in 2011 as a quick breakfast substitute after he spent some time traveling in Tibet tasting yak-butter tea drinks. He came back and experimented with butter in drinks and the concept of bulletproof coffee was born.

The drink is full of healthy fats and calories making it great for mornings when you don’t have time to sit down and eat breakfast. This makes even more sense that Carole Baskin would need something on the go. Changing the big cat industry must be very time consuming. Many meows to her for her work!

Some people have said that bulletproof coffee helps with focus. Some reported feeling energized and full after drinking it. It has also been said to help curb appetite.

To kick off this recipe you need the most important ingredient - coffee! Using the Rad Cat Coffee Co. You can brew your coffee however you would like. A french press is my personal favorite so that is what I used.

French Press
First, open your bag of Roaring Roast Coffee and take a whiff of those delicious grounds. Even if you aren’t a morning person, that smell will put a smile on your face. :)

Use coarsely ground Roaring Roast Coffee or grind the coffee yourself coarsely but as evenly as possible. A typical sized french press makes four cups of coffee. So for mine I used four cups of water and 1/2 a cup coffee beans. Add a little extra coffee for a bolder flavor.

Once your coffee is ground, add it to the bottom of the french press. Next, bring your water to a boil. I use a kettle but a pot on a stove will work. Once it boils, turn off the kettle (or remove the pot from the burner) and let it rest for one minute. This will stop you from scorching your coffee. Then, add the water to your french press. Stir the coffee and the water really well. Make sure there are no air pockets in the bottom. Put the top on and let the coffee steep for four minutes.

Blend the Ingredients
Next, get your blender ready. Put two cups of brewed, hot coffee in the bottom of the blender. I personally use a strainer with my french press but it isn’t 100% necessary.

Add two tablespoons of grass-fed unsalted butter or ghee.

Add up to two tablespoons of unrefined coconut oil or MCT Oil. Some people start with a teaspoon and work their way up. I went all in and did two tablespoons.

MCT stands for medium chain triglycerides. MCT is a type of fat that comes from coconut oil. MCT is known for making the coffee super energizing. I would have used it in my own recipe but I couldn’t find any at a store near me but coconut oil was really easy to find.

Blend it all up and pour into your coffee mug. It is much creamier and richer than I imagined. I thought the drink would need milk but it really didn’t. It tastes like a rich, foamy latte.

Recipe - Bulletproof Coffee

Time to prepare: 8 minutes
Serving size: One large bulletproof coffee

Ingredients
-Roaring Roast Coffee from Rad Cat Coffee Co.
-2 tablespoons of unsalted grass-fed organic butter or ghee
-1 teaspoon to 2 tablespoons of unrefined coconut oil (or MCT oil)

Materials
-A Blender
-A Coffee Maker (I used a french press)

Directions
1. Brew some delicious Roaring Roast Coffee.
2. Pour 2 cups of hot, Roaring Roast Coffee in the bottom of your blender.
3. Add 2 tablespoons of grass-fed unsalted butter to the blender.
4. Add 1 teaspoon to 2 tablespoons of unrefined coconut oil or MCT oil to the blender.
5. Blend it up.
6. Pour it into your mug and drink it up! :)

Honey, Cinnamon, Vanilla Catadito - The Cuban Kitty | Rad Cat Coffee Co.

This catadito aka Cuban Kitty is the Rad Cat version of a cortadito! A cortadito is Cuban espresso (which has sugar mixed with the espresso just after it is made) with a little milk.

“Cortadito” translates to ‘a cut’. Cuban espresso is cut with milk. Cortaditos are really strong in caffeine and flavor. Even the laziest of cats will be buzzed with caffeine after one of these! Some say it is more potent than cat nip!

In the 1960s, Cuban Americans brought cortaditos to the Miami/Miami Beach area and it is now a part of Florida’s coffee culture. You can get a cortadito at most convenience stores and restaurants.

Our Cuban Kitty has the essence of the traditional cortadito with a twist. I wanted a slightly sweeter version to cut the caffeine just a bit so I added my favorite concoction of honey, vanilla and cinnamon.

I used a very inexpensive Cuban espresso maker. It kind of looks like what transformers would use if they made coffee. See below!

I got my Cuban espresso maker at target for $6.99. I have seen them on occasion at Ross, Tj Max and more. There are plenty online as well. I also used a cheap strainer just to make sure I got any coffee grounds that might have come through the top. I used Rad Cat Coffee Co.’s The Cats Meow coffee for the catatido. The notes of caramel pair perfectly with the cinnamon and honey. It is a must for this recipe!

This recipe is pretty quick and uncomplicated. First you remove the espresso filter and put water in the bottom of the espresso maker. I filled mine up about half way. I didn’t add the full amount of water because I want the espresso to be a bit stronger and less watered down.

Next, get your coffee ready. If you bought whole bean Rad Cat Coffee, grind your coffee beans finely like espresso. If you bought ground then you just put the coffee directly into the filter. Put the filter over the water before filling it with coffee.

Fill up the filter with coffee. Don’t press it down. Lightly run you fingers over the top to get rid of any excess coffee. Then screw the top of the espresso maker on.

Then, lift the lid of the espresso maker and add one tablespoon of honey. Add less honey if you don’t want it to be as sweet. Add a teaspoon of cinnamon and a teaspoon of vanilla. Then add your choice of milk. I suggest half and half for a delicious and creamy drink. I used oat milk because it was all I had on hand.

Then, you close the lid to the espresso maker and put it on the stove on high. Be sure to put the espresso maker on the edge of the burner as pictured below.

Watch the espresso maker closely. Once the water starts boiling it comes out the spout in the top. Once it is finished making the espresso pour it carefully into a glass through a strainer.

Then, add whipped cream and sprinkle cinnamon on top. Your cat will be so jealous!

Recipe - Honey, Cinnamon, Vanilla Catadito - The Cuban Kitty

Time to prepare: 20 minutes
Serving size: One catatido aka Cuban Kitty

Ingredients
-The Cats Meow Coffee from Rad Cat Coffee Co.
-3/4 a cup or so of half and half (Milk will work but it won’t be as creamy)
-1 teaspoon cinnamon, plus some for garnish
-1 teaspoon vanilla
-1 tablespoon honey
-whipped cream

Materials
-a Cuban espresso maker (moka pot)
-a strainer

Directions
1. Put room temperature water into the bottom of the Cuban espresso maker. Then put the filter in.
2. Add espresso ground The Cats Meow coffee to the filter. Screw on the top piece.
3. Add the honey, cinnamon, vanilla and half and half to the top. Close the lid.
4. Put the espresso maker on a burner on a stove on high. Once the water boils espresso will come through the spout and into the top.
5. Once it is finished making espresso, turn off the stove and pour the mixture through a strainer into your glass.
6. Add whipped cream and cinnamon to the top.
7. Enjoy it like a cat on a scratching board!
